A: Maltagliata di pollo con limone e herbe. $15.00 per serve .

Slow cooked free range chicken breast, sliced and then pan fried with onions, herbs and lemon zest, served with a rocket salad.

HISTORY: A recipe from my Zia Giovanna from Grumo in Puglia. This is a typical chicken dish which is simple and fresh tasting using the bountiful lemons which are currently in season.

Slow cooked meatloaf rolled filled with a ham and parsley frittata served with a sweet pepper sauce.

HISTORY: In Puglia you will find many versions of this dish often you will find boiled eggs and pancetta in the middle. In this recipe, ham and a parsley frittata are rolled in the middle of the meatloaf. It may be served hot or is perfect cold served with the peperonata
